Cooking Pochero for Lunch

I always think of my daughter whenever I cook our meals. It matters little whether my husband is going to like or not. What I’m really aiming for is to make my daughter eat healthy food. My daughter is never a picky eater and I am  glad that she always eats what I cook. However, I noticed she prefers to eat dishes with soup or sauce.

Today I cooked a dish that I have never cooked before — a dish that originated from Spain. For our lunch, I cooked pochero for the first time and I can say that I nailed it. Pochero means “pot stew” but just that description is rather vague. It is pork cooked with vegetables and tomato sauce.

What I cooked looked like pochero, tasted like pochero and is delicious. It’s a balanced meal with meat and vegetables. My daughter really likes eating the vegetables from it and as a parent, I enjoy seeing her eating her veggies. I am just thrilled that she’s going to be a healthy toddler that likes her vegetables.

Ingredients:

  • 1/2 kilo pork cubes
  • 5 cloves garlic, chopped
  • 1 medium size onion, chopped
  • 4 pieces saba, sliced diagonally
  • 1 small bundle, green beans, trimmed
  • 1 small cabbage, cut into chunks
  • 1/2 cup garbansos or green peas
  • 1/2 cup tomato sauce
  • 3-4 cups water
  • 1 red bell pepper, sliced 
  • 2 potatoes, cut into cubesquartered
  • salt and pepper
  • cooking oil
  • fish sauce

Procedure:

  1. Saute onion and garlic. Add the pork to give it a sear.
  2. Add 3-4 cups water and tomato sauce. Cover and simmer over low heat until pork tender.
  3. Add potatoes, saba and garbansos/green peas. Season with salt, pepper and fish sauce. Simmer for 10 minutes or until potatoes are cooked.
  4. Add the cabbage, green beans, and bell peppers. Turn off the heat then cover the pan for five minutes for the other vegetables to cook.
  5. Serve with steamed rice.
